Đầu tiên, cho 1 lít nước vào nồi rồi rắc từ từ từng ít 20g bột rau câu vào nồi nước, vừa rắc vừa khuấy đều cho bột rau câu tan hết. Ngâm rau câu 30 phút cho nở mềm rồi mới tiến hành nấu rau câu.
Trong khi chờ ngâm rau câu bạn cho bột nghệ, bột men gạo đỏ, sữa đặc ra 3 bát con rồi thêm 1 ít nước sôi vào từng bát, khuấy đều cho hòa tan.
Nồi nước rau câu sau khi đã ngâm xong thì đặt lên bếp nấu cho sôi, hớt bỏ bọt và tiếp tục nấu cho rau câu chuyển màu trong thì tắt bếp, múc rau câu ra 4 cái khuôn đã chuẩn bị sẵn. Bạn cho nước màu đã pha sẵn vào từng khuôn rau câu, khuấy đều cho hòa tan ngay lúc rau câu còn nóng, như vậy chúng ta được 4 màu rau câu để làm mứt rau câu. Để cho rau câu nguội thì đem cất ngăn mát tủ lạnh khoảng 2-3 tiếng cho đông lại.
Tiếp theo, gỡ rau câu ra khỏi khuôn rồi dùng dao gợn sóng cắt thành các thanh to, nếu không có dao gợn sóng bạn dùng dao thường để cắt cũng được.
Xếp các miếng rau câu lên giá sắt rồi đem sấy trong lò nướng ở nhiệt độ 100 độ C, thời gian hong mứt khoảng 5-6 tiếng, bạn nên dùng đũa gài ở cửa lò để lò luôn hé cửa chứ không đậy kín nắp cửa lò nhé! Hoặc nếu không có lò nướng bạn cũng có thể đem phơi nắng khoảng 2-3 ngày cho mứt khô dẻo lại là được.
Bảo quản mứt rau câu trong hũ sạch để ăn dần hoặc bạn cũng có thể làm để đem biếu người thân hoặc bạn bè.
