Trộn đều thịt tôm giã mịn với ít muối, tiêu xay. Sau đó múc 1 muỗng tôm cho vào lòng bàn tay, dàn đều rồi đặt tôm nguyên con lên sao cho phần đuôi lộ ra ngoài. Nắm tay cho thịt tôm ôm lấy phần tôm nguyên con.
Bánh đa nem cắt làm đôi theo đường chéo. Sau đó gập mép phần đường chéo lại, đặt tôm vào giữa, cuộn lại rồi dùng lòng đỏ trứng quết mép cuối để kết dính lại.
Làm nóng chảo với lượng dầu đủ ngập mặt tôm khi chiên. Chờ dầu nóng rồi thả tôm vào chiên trên lửa vừa cho đến khi vàng đều thì vớt ra đĩa có lót sẵn giấy thấm dầu.
