Bánh Tiêu Nhân Sầu Riêng - món ăn vặt rất được ưa chuộng, gây sốt sình sịch trên các trang mạng xã hội. Cách làm bánh tiêu nhân sầu riêng của nhà mình đây các bạn ạ! Vỏ bánh tiêu chiên rất xốp giòn, bao lấy nhân sầu riêng mịn, ngọt béo và hương thơm rất đặc trưng luôn nhé.
Cách làm bột bánh tiêu chiên nở phồng xốp: Đun 400ml sữa tươi 40 độ C, tắt bếp, cho 15g đường vào, khuấy tan. Thêm 7g men nở, khuấy đều, để yên 15 phút (Khi thấy nước sữa men nổi lên trên mặt nước như gạch cua là được).
Trong tô sạch, trộn đều 400g bột mì với 1/2 muỗng cà phê muối, 1 muỗng cà phê bột nở (baking powder) và 85g đường trắng. Thêm 1 muỗng canh dầu ăn vào 150 ml sữa tươi, rưới từ từ vào tô bột mì, trộn đều. Sau đó cho cho nước sữa men vào hỗn hợp bột làm bánh tiêu, dùng tay nhào bột bánh thành khối đồng nhất. Bọc màng thực phẩm tô bột bánh, đem ủ bột làm bánh tiêu trong khoảng 2 giờ đồng hồ (hoặc đến khi bột bánh nở gấp đôi là được).
Sau khi bột bánh tiêu đã nở gấp đôi thì cho ra khay có rây bột chống dính. Nhồi sơ để bột bánh tiêu thoát khí. Nặn khối bột bánh tiêu thành hình trụ rồi cắt bột bánh thành các miếng nhỏ đều nhau.
Vo tròn từng viên bột bánh tiêu, lăn qua mè trắng rang rồi dùng chày cán cho viên bột bánh tiêu mỏng dẹp. Múc một ít nhân sầu riêng cho vào miếng bột, bọc kín lại (như bánh gối - bánh xếp - bánh quai vạc). Làm tương tự cho hết nguyên liệu làm bánh tiêu sầu riêng nhé.
Đun nóng nhiều dầu ăn trong chảo sâu lòng (hoặc nồi nhỏ), cho các miếng bánh tiêu nhân sầu riêng vào chiên ngập trọng dầu. Dùng đũa gỗ dài thường xuyên trở đều bánh tiêu sầu riêng để đảm bảo vỏ bánh tiêu chiên nở phồng đều các mặt. Khi thấy bánh tiêu chiên vàng giòn đều thì vớt ra để ráo dầu nhé.
